O namoro entre a cozinha e a adega da Vinho & Ponto Fortaleza ampliou os laços logo no primeiro mês do novo ano. A valorização de insumos locais, como o peixe panga, que desde 2021 a sua produção em cativeiro é autorizada no Ceará, marca um novo momento da gastronomia da loja e wine-bar, que passará a oferecer no cardápio pratos elaborados com peixe. A outra opção para os amantes de pescado será o salmão, ambos podendo ser harmonizados com vinho branco, rosé, espumante e até tinto. O convite ao público para essa nova experiência olfativa, gustativa, aromática e gastronômica já tem data marcada: 30 de janeiro.
Levando em consideração que o clima no Ceará pede opções de bebidas leves, alimentos frescos e saudáveis, Felipe Adjafre, franqueado da Vinho & Ponto Fortaleza e renomado pianista, vem sempre imprimindo inovação no cardápio do wine-bar e, consequentemente, nos jantares temáticos que acontecem sempre nas terças-feiras. Um dos eventos programados para janeiro será a Noite do Vinho Branco que, claro, será harmonizada com uma das novidades do cardápio que será lançado no final deste mês: peixe panga.
Com baixo teor alcoólico e geralmente servido em temperatura que varia entre 6ºC e 10ºC, o vinho branco, o rosé e o espumante têm sido a principal escolha dos brasileiros e dos cearenses para acompanhar pratos com peixe ou frutos do mar. Essa tendência por vinhos mais refrescantes, principalmente no verão e clima quente como o do Nordeste, representou um crescimento no país de 6% no consumo do vinho branco, 13% no rosé e 22% no espumante, quando comparado o ano de 2023 com 2024. Mas há espaços para essa harmonização com os tintos, desde que preferencialmente seja com uvas mais leves como Pinot Noir e Gamay.
Quanto às novidades que serão inseridas no cardápio, Felipe Adjafre conta que para chegar até a definição dos pratos, entradinhas e sobremesas, a interação dos seus dois chefs, com estilos diferentes e particularidades dentro da gastronomia, é o grande diferencial. E sua paixão pelo mundo dos vinhos arremata a harmonização perfeita que será oferecida nas mesas dos seus clientes e amigos. “É uma receita que vem dando certo e agradando os mais exigentes paladares.”
Para somar com os pratos que levam camarão e filé, um spoiler do que vem por aí no final deste mês inclui Filé de Salmão com Crosta de Ervas (Filé de salmão de 160g ao forno com crosta de ervas, acompanhado de arroz negro refogado com ervas frescas, tomate cereja e finalizado com Molho Gremolata) e o Panga Vinho & Ponto (Filé de panga de 160g marinado e grelhado no azeite, acompanhado de ratatouille desconstruído, purê de batatas assadas e fondue de pimentões). Ao todo, o lançamento prevê um total de quatro pratos principais, três entradinhas e uma sobremesa. Afinal, quem não gosta de um docinho no final de uma refeição?
